1 (2 pound) package frozen hash brown potatoes
2 (10¾ oz) can scream of chicken soup (undiluted)
1 (16 oz) sour cream
½ cup onion, chopped
2 cups cheese
Salt & pepper, if desired
2 cups cornflakes, crushed
¼ cup butter, melted

Directions:
Directions:
Preheat oven to 350º. In a large bowl, combine partially thawed potatoes, soup, sour cream, cheese, and onions. Spread in a 13X9X2-inch baking dish, coated with cooking spray. Bake uncovered at 350º for 45 minutes. Stir potato mixture. Sprinkle top with cornflakes and drizzle melted butter over cornflakes. Bake uncovered at 350º for an additional 15 to 20 minutes until potatoes are tender. Serves 12.
