1 1/2 cups of unsalted Butter (3 cubes) (set out to room temp - almost soft)
2 cups sugar
1 T or more of grated orange peel
2 te Vanilla
3 1/4 cups flour
1 te baking powder
1/4 te salt
1 1/2 cups dried cran-raisens
1 1/2 cups flaked dried coconut
1 cup white chocolate chips

Directions:

1) In a large bowl, with a mixer at medium speed, beat the room temperature butter, plus sugar, orange peel and vanilla until smooth
2) Put flour into a sifter, along with the baking powder and salt
3) Add the flour mixture to the butter mixture and beat until it all comes together.
4) Mix in cran-raisens, coconut and white chocolate chips for a few seconds just to mix together
5) Shape dough into into one inch balls and place on greased cookie sheet. You can just drop or use a "melon" ball. I have used both
6) Bake at 350 degrees until the cookie edges are just browned. Depending on the oven, 8 to 11 minutes. The cooking time will also depend on how moist the dough is from the orange peel
7) Let cookies cool on a sheet for a few minutes and transfer to racks to cool

No matter how many different cookie recipe's I have used, this is the all time favorite for our family, and for the many church functions that I bake for. It was originally my Aunt Margarets on my Dad's side of the family.
