1 pound ground beef - lean
1 pound ground Italian pork
1 pound ground veal (optional)
2 large eggs
1 cup dried Parmesan cheese
2 Tbs chopped parsley
About 3 cloves chopped fresh garlic - to taste
Salt and Pepper to taste
1/2 cup milk
1 small onion - chopped fine
1/2 Tbs red pepper flakes
1 Tbs Italian seasoning
1/2 - 3/4's cups dried bread crumbs

Directions:

1) Cover a baking tray with aluminum foil, spray and set aside
2) Soak the bread crumbs in the milk for about 15 minutes
3) Fry out the onions until translucent
4) Mix everything else together, adding the onions and the bread mixture. Be sure it is mixed well.
5) Cover and refrigerate for about one hour
6) Pre-Heat oven to 400o
7) Using wet hands, form meat mixture into balls about 2" to 2 1/2 " diameter. The meatballs will be "tender" - you will need to be careful when you form them into the balls.
8) Lay evenly onto the aluminum foil pan
9) Bake until only browned but cooked through. Turn over at ten minutes (about 20 minutes)
10) Add to your sauce and they will continue to cook another 1 to 2 hours

My Mom learned how to make these from my Dad. Come to find out it was the same recipe that my brother Johnny uses and my cousin MaryAnn. Bottom line? The meatball recipe was passed down from my Grandfather on my Dad's side of the family. I will never forget watching my Mom make these on a Sunday afternoon, then my Grandpa, various aunts in upstate New York, and my brother. It is definetly a family connection!
