4 roasted red peppers (in the jar)
4 skinless chicken breasts
8 cups water
4 green roasted chilies seeded and diced
1 onion quartered
4 stalks of celery (diced)
4 carrots sliced into large pieces
1 bay leaf
1/2 tsp. garlic salt
1/2 tsp. cayenne pepper
1/2 cup chopped fresh cilantro
1/2 tsp. cumin
2 zucchini sliced into large pieces
Salt and pepper
1 1/2 tsp. spicy chicken seasoning
1 1/2 tsp. blackened cajun seasoning
1 pkg. cooked wide noodles

Directions:
Directions:
In a large pot put the cooked, de-boned chicken breast and broth from the chicken breasts, add chilies, onions, celery, carrots, bay leaf, and seasoning. Reduce heat and cover the pot. Let it simmer for 30 minutes. Add zucchini, salt, and pepper to taste. Continue cooking until vegetables are tender, add cooked wide noodles. Remove the bay leaf before serving.
