Ingredients: Cake Ingredients -1/3 cup poppy seeds -3/4 cup milk -3/4 cup butter -1 1/2 cup sugar -1 1/2 teaspoon vanilla -2 cups sifted cake flour -2 1/2 teaspoons baking powder -1/4 teaspoon salt -4 eggs, separated, egg whites beaten stiff *reserve egg yolks for custard below
Custard Frosting Ingredients -3/4 cup sugar -1 teaspoon vanilla -1/4 teaspoon salt -2 cups milk -egg yolks that have been separated from whites for cake -1 tablespoon butter -3 tablespoons cornstarch

Directions:Preheat oven to 375.
Poppy Seed Layer Cake Soak the poppy seeds in milk and vanilla for 1 hour. Cream butter, adding sugar gradually until light and fluffy. Stir the poppy seed mixture into the creamed butter and sugar. Sift together dry ingredients and add to the poppy seed mixture. Fold eggs whites into the mixture gently. Bake in 2 8" round pans for 20-25 minutes. Cool and remove from pans.
Custard Heat milk over medium heat, stir in sugar, salt. Add cornstarch and stir constantly (if you don't stir correctly the custard will be lumpy). Stir a small amount of the hot custard mix into the egg yolks and stir constantly so the eggs don't cook too quickly. Add butter. Stir and add cornstarch until thickened.
Frost the cake with the custard. |
