1 Can (8oz.) Crushed Pineapple
2 C. Sifted Flour
1½ tsp. Baking Powder
¼ tsp. Baking Soda
¼ tsp. Salt
1 tsp. Vanilla
1 Egg
½ C. Shortening
1 C. Light Brown sugar (packed)

Glaze:

4 C. Sifted Powdered Sugar
3-4 Tbsp. Pineapple Juice

Directions:
Directions:
1. Drain pineapple, reserving liquid.
2. Sift flour with baking powder, soda and salt. Set aside.
3. In large bowl beat with mixer at medium speed, shortening and sugar.
4. Beat in egg, add vanilla.
5. Add drained pineapple, mix well.
6. Stir in flour mixture until well combined.
7. Drop by rounded teaspoonfuls onto cookie sheets.
8. Bake at 375º for 8-10 minutes in preheated oven.

9. Make glaze, by mixing sugar and pineapple juice until smooth.
10. Spread onto cooled cookies.

This is a soft, flavorful cookie. Since pineapple comes in larger cans, the recipe doubles well, making plenty of cookies to freeze.
