1½ c. powdered confectioner's sugar, sifted
½ tsp. lemon juice (fresh is best)

In a medium bowl, beat egg whites until frothy. Gradually add powdered sugar, beating consistently. Beat 10 minutes or until glossy. Add lemon juice and beat 2 minutes or until icing stands up in soft peaks.

You can add food coloring, or 1 tsp. cocoa powder or 1 tsp vanilla to give it some variety, use more powdered sugar if you add liquids.

Makes a nice thin, satiny-smooth crust when added over cookies and cakes.
