3/4 cup olive oil
1/4 cup lemon juice
1/4 cup egg substitute
2 large cloves garlic, pressed
1 tsp dried oregano
1/4 tsp salt
1/8 tsp pepper
1 head romaine lettuce torn
3/4 cup kalamata olives pitted
1 small red onion, thinly sliced
1/2 cup crumbled fete cheese

Pita Croutons
2tbsp olive oil
1 tsp dried oregano
1/4 tsp crushed garlic
dash of course salt

Directions:
Directions:
Combine olive oil and the next 6 ingredients in a small bowl, whisking until blended. Cover mixture and chill
Combine lettuce and next 3 ingredients in a large salad bowl and drizzle enough dressing to coat leaves, tossing gently. Sprinkle with Pita croutons and serve with the remaining dressing

Pita Croutons
Split 8" pita pockets into two circles
Brush with oil mixture and sprinkle with salt
Stack circles and cut into wedges
Bake in a 400º oven 5-7 minutes or until crisp and golden

Perfect warm evening dinner salad and saves you a few calories My daughter can whip this up in a flash !! one of her favorites. Roast some chicken breast with Greek seasoning , slice and top the salad
