1 ½ lb. pork sausage (we like the hot sausage, but you can use mild)
9 eggs, slightly beaten
3 cups milk
2 ½ tsp dry mustard
1 tsp salt
1 ½ cups grated cheddar cheese
3 slices bread cut into small cubes

optional: onion, green pepper, mushroom, or whatever else you like in your egg casserole

Directions:
Directions:
Brown the sausage, drain. Spread in greased 9 x 13 pan.
Beat eggs, blend in milk, dry mustard, salt, bread, cheese and any other ingredients you like. Spread over sausage.
Cover pan and refrigerate overnight.
Uncover and bake at 350º for 60 min.

We used to have this for Easter breakfast. Make it the night before because it has to sit overnight.
