½ cup vegetable oil
1 cup sugar
2 eggs
1 tsp vanilla extract
1 tsp cinnamon
½ tsp salt
1 tsp baking soda
2 cups flour
3 apples, peeled, cored, and chopped
¼ cup nuts (optional)

Directions:
Directions:
Combine and mix oil, sugar, eggs and vanilla. Add dry ingredients and mix. Stir in apples. Mixture will be thick.
Fill muffin cups about ⅔ full and bake at 325ºF for 20-25 minutes.
