4 c. cooked rice of your choice
2 green peppers, diced or sliced thinly
2 red peppers, diced or sliced thinly
1 c. corn kernels
1 large onion, white or red, diced or sliced thinly
2 T. garlic flavored coconut oil or sesame oil
1 - 2 garlic cloves, minced
protein of your choice, beef, chicken, pork or tofu, etc.
1 egg, beaten

Once a week prepare a pot of rice using 1 teaspoon of garlic coconut oil to 1 cup of rice according to directions on the package. Sauté vegetables separately and store separately. Cook garlic with onions. Now you have all the components to put together a fast stir-fry with left over meats. Heat a skillet over medium-high heat adding a teaspoon of garlic coconut oil. Then stir-fry a combination of vegetables of your choice. Add a cup of chilled rice. Then add 1 cup of protein. Clear the center of the pan and scramble in a beaten egg. Combine. This recipe is for one but you make enough vegetables and rice for the week. Other vegetables can me added as well.
