1 cup cooked quinoa
1 can chickpeas, drained and rinsed
3 tbsp buffalo sauce
1 roma tomato, diced
1/2 red onion, diced
1 small cucumber, diced
1/2 cup shredded carrots
1/4 cup feta
4 tbsp Hampton Creek Just Ranch dressing

Preheat the oven to 400. Drain and rinse the chickpeas then tossed them with the buffalo sauce. Baked them for 35 minutes. Meanwhile dice the red onion, tomatoes, and cucumbers. Place the 1/2 cup of cooked quinoa in each dish. Top with veggies and baked chickpeas. Sprinkle each salad with feta and then drizzled it with a little extra buffalo sauce and Hampton Creek Just Ranch dressing.
