1 tsp season pepper ¼ cup flour
1 tsp cilantro ½ tsp salt
1 tsp cumin 1 tsp seasoned pepper
1 tsp season salt
6 boned chicken breasts ¼ tsp cumin
Halved, pounded into ¼ inch 1 tsp cilantro
Thick pieces 2 cups milk
2 cups bread crumbs 1/3 cup dry white wine
Oil 1 cup grated Monterey Jack
3 tbs margarine cheese

Directions:

Mix together seasoned salt, season pepper, cilantro and cumin.
Sprinkle season over the chicken cutlets and dip in bread crumbs.
Pour Oil into a large skillet and brown chicken. Remove to a 9x13 inch greased baking dish. In a saucepan, melt margarine, blend in flour and seasoning. Add milk and stir constantly, cook until thickened. Remove from heat and stir in wine. Pour sauce over chicken and bake at 350 for 45 minutes. Remove from oven and sprinkle cheese on top of each piece of chicken; return to oven for 5 minutes.

This new twist on chicken was a hit and Mr. Weldon and Ms. June's. Once Pop came up with this, they had Rachel cooking this once a week for them.
