Onion Shortbread Recipe

2 onions, chopped fine
1 stick butter
8 ounces sour cream
1/2 teaspoon dill weed
1/4 teaspoon salt
8 ounces cheddar cheese, divided (reserve 4 ounces for top)
Main:
1 box Jiffy corn muffin mix
1 can creamed corn
1/2 cup milk
1 egg
4-8 drops Tabasco Sauce

Directions:
Directions:
Preheat oven at 325º.

For topping: Sauté onion in butter stir in sour cream, dill weed, salt and 4 ounces of cheese.

For main: In separate bowl, combine Jiffy corn muffin mix, egg, mild, cream corn and Tabasco.

Pour corn mixture in butter 10" or larger baking dish. Then pour onion mixture evenly over corn mixture. Top with 4 ounces of cheddar cheese.

Bake 30-40 minutes.

Gloria gave me this recipe in 2016. She makes it for church events, and always gets rave reviews. She said that people who don't like onions, still like this.
