2 lbs. fresh mushrooms, sliced
3 T. Butter
3T. Flour
Dash of paprika
Juice of 1/2 lemon (1 T.)
1 egg yolk
1 c. Cream

Topping:
1/2 large package rich, round butter crackers, crushed.
1/2 lb. butter, softened

Directions:
Directions:
1. Briefly sauté' mushrooms in 3 T. butter. Add flour and simmer 10 minutes.
2. Combine paprika, lemon juice, egg yolk and cream. Add to mushrooms.
3. Place mushroom mixture in a 9x13 baking pan.

Sprinkle topping on. Let stand in refrigerator overnight.
Bake at 350º for 30 minutes. Do not brown top too much.

Topping:
Combine crushed crackers and the butter. Sprinkle topping on mushrooms mixture before refrigeration.

Hint: If a creamier scalloped effect is desired, bake in a casserole dish.
