1 cup butter
2 cups diced celery
1 1/2 cups chopped onion
1/4 cup finely chopped parsley
1 tsp salt
2 tsp poultry seasoning
1/2 tsp pepper
16 cups lightly packed fresh bread cubes
3 eggs, slightly beaten

About 40 minutes before using:
In a large saucepot over medium heat, in a hot butter, cook celery and onion until tender, about 10 minutes. Add parsley, salt, poultry seasoning and pepper; mix well. Stir in bread cubes and eggs; mix well.
Makes enough stuffing for one 8-11 pound turkey, about 8 cups. Or, place in a greased 8x8 pan and bake at 350 for 20 minutes.
