1 Chicken- cut up
All-purpose Flour
2 tbsp. Baking Soda
1 C. Water
Salt & Pepper to taste
Vegetable Oil

Directions:
Directions:
Heat vegetable oil in a cast iron skillet. Rinse & dry chicken. Salt and pepper chicken. In a separate bowl, mix baking soda and water together.

In additional bowl, dredge chicken in flour. Then put floured chicken in baking soda and water mixture. Then back in flour.

Place chicken in hot vegetable oil. Fry on medium heat. Fry until juices run clear.

Alternative: Use chicken breast fillets.
