1/2 cup Quinoa, uncooked
Oil
1/3 cup Crumbled Feta
1/4 of a Purple Onion, Slivered
3 Ears of Corn, Grilled and cut off cob
1/4 cup Fresh Mint, Chopped
1 Avocado, cubed

Dressing:
2 tblsp, Olive Oil
1 tsp. Lime Juice
2 tblsp. Wine Vinegar
1 tsp. Honey
Saltn and Pepper to taste

Directions:
Directions:
Cook quinoa according to package directions, mix this with corn and remaining salad ingredients. Mix together dressing ingredients and toss into salad.

Personal Notes:
I have used one can of corn instead of charred fresh corn, It still tastes good.. You can also leave out the avocado if you don't have one on hand.
