2 cups scalded milk, water or potato water
1/2 oz. compressed yeast
6 to 6 1/2 cups flour
1 T. salt
2 T. sugar
2 T. butter or margarine

Directions:
Crumble yeast in 1/4 cup lukewarm water. Put salt, sugar and fat in a large bowl and pour scalded liquid over. Let stand until lukewarm. Add yeast and half of the flour. Beat. Add remaining flour gradually. Turn out on floured board and knead until smooth and elastic. Put into bowl, cover and let rise. When doubled in bulk, divide into two parts, shape into two loaves and place in greased pans. Let rise until dough is nearly to the top of the pans. Brush with melted butter. Bake at 350º for 45 minutes or until bread shrinks from the sides of the pan.
