1 lb. bacon cut into very small bits
1 lb. red sweet onion
5 lbs. lean steak, trimmed beef brisket, steak or chuck roast, cut to small cubes. (I half this and cut one in small pieces and one in bigger chunks.)
1/3 cup McCormick chili powder (there really is a difference)
1 heaping tbsp. fresh garlic, minced
1 heaping tbsp. ground cayenne pepper
1 tbsp. cumin
1 tbsp. ground oregano
1 tbsp. ground sea salt
1 tbsp. black pepper
3 4 oz cans green chili chopped
3 12 oz bottles Corona beer
1 28 oz can diced tomatoes
1 tsp coriander
1 6 oz can tomato paste
1 ounce unsweetened chocolate, chopped very coarsely
(Yes, chocolate. it adds a unique flavor hint and helps bring on that rich brown color. Trust me, don't leave this out.)

Start with a large skillet. In it place your diced bacon, onion, and garlic. Cook until the bacon is well-cooked and brown before you rake the cooked ingredients into a large stock pot.

Now you will want to add all your other ingredients to the stock pot. Bring to a boil. Reduce heat to low-medium and cook at least 2 hours, stirring up from the bottom often to make sure that chili doesn’t stick. After 2 hours reduce heat to a low simmer and cook 2 more hours, again stirring from the bottom of the pot. Be sure to cook the chili long enough.

When the meat is tender the chili is done. Test by trying a couple of pieces of the meat. Should be very tender, and starting to come apart. If it’s not tender, keep cooking on simmer. If it gets too thick, add another bottle of beer. To add more heat, add more cayenne pepper.

We serve this up over Fritos, over pasta, or just in a bowl by itself.

One thing the King’s kids will tell you is that “Pop don’t cheat when it comes to chili.” Use the best meat. Since your not making Sloppy Joe’s or spaghetti “what’s up with the hamburger?” “No, roast or steak will do for my chili pot.” As Grandpa Smith would say, “Dat’s GoooooooooooD!!”

*Chili has to stand on its own flavor and contents. Beans are a Northern thing. In the chili cook-offs here in Texas, a contestant who puts beans in their chili would be automatically disqualified.
