1 lb. cooked shrimp
1/2 cup lime juice
1 large green pepper, finely diced
2 Tbsp. green onions, finely chopped
2 Tbsp. minced parsley
2 Tbsp. safflower oil
4 dashes hot pepper sauce
1/8 Tsp. black pepper
salt to taste
shredded lettuce
canned artichoke bottoms, drained

Directions:
Directions:
In glass bowl, combine shrimp and lime juice. Cover and chill for 2 hours. Drain off most of the lime juice. Add green pepper, onions, parsley, oil and hot pepper sauce. Season with black pepper. Arrange shredded lettuce on a large platter. Fill artichoke bottoms with the shrimp mixture. Arrange over the lettuce and serve.
