1/2 Cup Oatmeal ( I use old-fashioned oats)
1 cup flour
1 1/2 cup whole wheat flour
1 cup sugar (recipe calls for 1 1/2 cups)
1 TBS baking powder
1 tsp. salt
1 1/2 tsp. Cinnamon
3 eggs plus 1 egg white
3/4 cup oil
1 cup grated zucchini
1 cup grated carrot
1/2 cup raisins

Directions:

preheat oven to 350º
Combine all dry ingredients. Whisk oil and eggs, stir in zucchini, carrots, and raisins
Add dry ingredients and stir until combined.
Fill muffin cups about 3/4 full and bake approx. 20 minutes.
They are done when a knife inserted comes out clean, and tops spring back when lightly touched.

*I spray muffin tins prior to filling
