1 large eggplant
pine nuts browned in butter
1 lb ground beef
1 large onion, chopped
2-3 cloves garlic, finely minced
olive oil
1 medium can tomatoes
tomato paste
salt and pepper

Directions:
Directions:
Preheat oven to 350-375 F

Cut eggplant in half crosswise, then cut lengthwise in ½ inch slices. Brush both sides of eggplant slices lightly with olive oil. Arrange on a baking sheet and broil eggplant in batches until deep mahogany brown, turning once to brown both sides.

In a small frying pan, melt 1 tablespoon of butter. Add the pine nuts and cook until golden brown, stirring constantly. Remove from heat and set aside.

Saute onions until translucent. Add garlic and cook until garlic if fragrant. Add beef and break up into small chunks. Add cinnamon, salt and pepper and mix. Add tomato paste and mix well. Continue cooking until tomato paste takes on a golden sheen. Add tomatoes.

Layer an oiled baking dish with the eggplant slices. Then sprinkle the pine nuts over all, and then cover with the meat sauce. Bake for 1 hour.
