1 large fryer, cut up and browned in clarified butter
6-8 medium onions, sauteed until golden
2 cans chick peas, drained
2 cups rice
2 t. salt
4 cups chicken broth
salt and pepper, to taste
1-2 t. cinnamon
parsley and green olives, chopped for garnixh

Directions:
Directions:
Wash rice. Add 2 t. salt and blanch. Brown onions.
Layer chicken in deep baking dish. Drain rice and cover
chicken with it. Add hommos, salt, pepper, and
cinnamon.

Boil liquid (water or chicken broth) and add. Lastly, add
fried onions. Simmer. Cover. Cook for 45 minutes to
1 hour. Don't uncover.

Garnish with parsley, and black or green olives.
