1 large eggplant, peeled and quartered
6 T olive oil, divided
salt and pepper, to taste
1-2 cans chick peas
2-3 large onions sliced
1 small can tomato sauce

Directions:
Directions:
Cut each eggplant quarter in half and coat with 2 T. olive oil. Add salt and pepper and toss. Place on 9 x 13" baking pan and bake at 375F until the eggplant is tender.

Drain chick peas and reserve the liquid. Heat remaining oil and add the sliced onions. Saute until transparent, then add the drained chick peas. Continue to saute for 2-3 minutes more.

When the eggplant is done, spread onion mixture evenly over. Mix tomato sauce with reserved chick pea liquid, salt and pepper and pour over all. Bake 30 minutes more.
