Cajun Dry Rub
1 tbsp cracked black peppercorns
1 tbsp salt
2 tsp crushed fennel seed
1 tsp dried thyme
1 tsp sweet or hot paprika
1 tsp dry mustard
1 tsp garlic powder
1/2 tsp ground red pepper
1 tsp ground sage

Rib Eye or New York Strip Steak

Mix Cajun dry rub spices together. Rub will stay potent for up to six weeks if kept in cool, dark, dry place. Make sure you use peppercorns and fennel seeds, don't use ground pepper or fennel. We hand grind the seeds.
If the steak is lean brush with olive oil.
Season both sides of steak with rub. Heat a large, heavy skillet or electric griddle to medium-high heat. Depending on thickness of steak sear one side for five minutes. Turn over and sear the other side for 3 to 4 minutes for rare, 5 to 8 minutes for medium. Don't over cook.
You want to make sure the pan is very hot so you caramelyze the rub. Do not put any oil in the pan.
This is very smoky, I have put the electric skillet outside to get rid of smoke.
