1/2 C boiling water
1 1/4 tsp cinnamon
1 tsp ginger
1/2 tsp cloves
1/2 tsp salt
Dash of nutmeg
1 C light brown sugar
1/4 C toasted coconut
1 1/2 C pumpkin
1 regular sized can evaporated milk
Premade pie shell

Directions:
Directions:
Preheat oven to 425 degrees.
Blend boiling water with spices.
Combine with 2 eggs. Temper the eggs first.
Add brown sugar, coconut, pumpkin & evaporated milk.
Pour into a pie shell and bake at 425 degrees for 15 minutes. Turn oven down to 350 degrees and cook for 30 more minutes.
