6 firm peaches, pitted & quartered
1/4 C + 1 T extra virgin olive oil
1 clove garlic, minced
1/4 C red wine vinegar (or a little less)
1 tsp Dijon mustard
1 tsp honey
Kosher salt
1/2 C sliced almonds, very lightly toasted
3 to 4 C baby arugula
1 C ( or less) of a high quality blue cheese

Directions:
Directions:
Heat the grill to medium or the oven to 250 degrees. Add the peaches to a large bowl & drizzle with1 T olive oil & toss to coat. Grill 1 minute per side.
Meanwhile, make the dressing. In a small bowl, whisk together the garlic, vinegar, mustard, honey & remaining 1/4 C olive oil. Season with salt.
Gently mix the warm peaches, almonds, arugula & blue cheese in a large mixing bowl.
Toss with the dressing.
