Ingredients: 15 lbs. tenderloin using Meg's Tenderloin recipe 12 lbs. ham (Kirkland Signature Honey Ham from Costco is every bit as good as Honey Baked and much more reasonably priced) 8 lbs. fresh shrimp Large bag of Kirkland signature ruffled potato chips Large bowl of cashews Large bowl of salted almonds 3 huge bowls of salad (definitely Meg's Supper Club Salad) 72 dinner rolls (Sam's Club sells delicious dinner rolls in packs of 36) 1/2 sheet cake from Brookfield Wedding Cakes (beautiful, delicious and a bargain) Add in a few appetizers if desired 4 pans bars (make ahead Lemon Bars, Ghetto Bars etc. etc.

Directions:Meg and I put this menu together for my mom's 80th birthday party which was held the same night Katie and Erik got engaged. Because of the engagement, Meg and Buddy couldn't come to my mom's party, but Meg loaned me several bowls and came over to make sure I had enough tenderloin. I made the tenderloin the day ahead and Meg said, "I think you should make a little more, just in case." So I did and all the amounts of everything worked perfectly for a large crowd.
Meg gave my mom a copy of the book "You're Only Old Once" by Dr. Suess which was the hit of the party. |
