1 (14 oz.) pkg. gingerbread cake mix
3 C eggnog
2 (5.1 oz.) pkg. instant vanilla pudding mix
2 C heavy cream
1/4 C white sugar
2 tsp. vanilla extract
2 Tbs. gingersnap cookie crumbs (optional)

Prepare gingerbread cake mix according to directions. Cool completely.
Place the pudding mix in a large bowl. Pour in the eggnog and whisk for about 2 minutes. Refrigerate until gingerbread cake is cool and you are ready to assemble the trifle.
In a large bowl, whip cream until stiff peaks are just about to form. Beat in sugar and vanilla until stiff peaks form. Add nutmeg and cinnamon to taste. Crumble 1/2 of the gingerbread into the bottom of a trifle bowl (or any deep glass bowl. This is for seeing the layering effects, so not really necessary.) Spread 1/2 of the eggnog pudding over the gingerbread, then spread 1/2 of the whipped cream on top of the pudding. Repeat layers. Refrigerate 6 hours or overnight. Sprinkle the top with cookie crumbs before serving.
