8 oz uncooked orzo (1⅓ cups)
2 cups chicken stock
One 19 oz can of diced tomatoes + juice
2 bell peppers
1 cup diced zucchini
1 cup snap peas
1 small red onion
2 chicken breasts, cut into ½ inch cubes
2 tablespoons cajun spice
¼ teaspoon salt
1 cup parmesan cheese, shredded

Directions:
Directions:
Combine all ingredients except the parmesan in a large pot.
Bring to a boil reduce heat and simmer for 15 minutes, stirring every 3 or so minutes, or until pasta is cooked through.
Stir in the parmesan cheese, and serve.
