1 Box of frozen chopped spinach, thawed and drained well
1 Stick butter or margarine, melted
1 Large Egg, beaten
1 Cup crushed croutons (herbed or Italian give better taste)
1/4-1/2 tsp. garlic salt
1/2 Cup parmesan cheese, grated or shredded
1 Small onion, finely chopped (optional)

Directions:

Preheat oven to 350º F
Mix all the ingredients together
Cover and Chill at least 30 minutes
Spray baking dish or sheet pan with cooking spray
Form into small balls and place on dish/pan
If balls touch, that is fine
Bake 15 minutes
Let rest 3 minutes

DO NOT USE COOKIE SHEET OR DISH WITHOUT SIDES!
Best if you can combine all ingredients, cover and chill overnight. Then use a 1 Tb size scoop to make balls. The longer they chill, the better they taste!! I have never brought one home!
