1/3 c honey
1/4 c maple syrup
1/3 c canola oil
2 Tbsp water
1/2 tsp pure vanilla extract
1/4 tsp cinnamon
1/4 tsp salt
4 c rolled oats
1/4 c sesame seeds
1/4 c raw pumpkin seeds (optional)
2 Tbsp flax seeds (optional)
1/2 c raw sunflower seeds
3/4 c chopped nuts of your choice (pecan, cashew, almonds, walnuts are good)
3/4 c shredded unsweetened coconut
Optional, Hold aside until after baking if using:
1/2 c raisins
1/2 c dried cherries, chopped dried apricots, and/or dried cranberries.
1/4 c hemp seeds (after cooking)

Directions:
Directions:
Preheat oven to 350º, and line 2 rimmed baking sheets with parchment.
Combine the honey, maple syrup, oil, water and vanilla, set aside.
Toss together all the dry ingredients (leaving aside dried fruit and hemp seeds if using).
Add the honey mixture and toss with a spoon until the oats are well covered.
Spread granola over two rimmed baking sheets in a thin layer.
Bake for 25-30 minutes. After 10 minutes toss the granola with a spoon and rotate the trays from top to bottom so they bake evenly. Keep a close eye on it as it starts to turn brown so it doesn't over bake. It will be a deep golden brown when done.
Allow to cool fully on a cooling rack. Add dried fruit and hemp seeds if using.

Eat as a breakfast cereal, give as gifts in glass jars. We eat in a breakfast parfait every day, layered with banana, granola, homemade yogurt, berries, and drizzled with Honey.
