1 lb. green beans
1 1/2 lbs. beef top round steak
1/4 cup salad oil
3 garlic cloves, finely minced
3 tbsp. soy sauce
2 tbsp. dry sherry
1 tbsp. sugar
pinch of ground ginger
3 tbsp. cornstarch
1/2 cup water

Cut green beans into 1 in. pieces; set aside. Cut round steak lengthwise in half. With knife held in slant position, slice across width of each half into 1/8 in. slices; cut slices into 1/8 in. strips. In 12 in. skillet over medium high heat, in hot salad oil, stir fry meat (stirring quickly and constantly) about 3 minutes or until meat loses its pink color and is tender. With slotted spoon, remove meat to small bowl.

Into drippings in skillet, add green beans, garlic, soy sauce, sherry, sugar and ginger; cook 3 minutes stirring occasionally. Reduce heat to low, cover and cook about 10 minutes or until green beans are tender crisp. Return meat to skillet; heat through. In cup, combine cornstarch and water. Pour cornstarch mixture into simmering meat mixture; cook, stirring constantly, until thickened, about 1 minute.
