8 oz. cottage cheese
2 c. cheddar cheese (shredded)
1 onion (chopped)
1/4 c. chopped olives
12 corn tortillas
6 T. flour
6 T. margarine
3 chicken bouillion cubes (2 c. hot water)
1 1/2 c. sour cream

Directions:
Directions:
Mix cottage cheese, 1 1/2 c. cheddar cheese, onion & olives.
Fry tortillas...drain...fill with cheese mixture.
Place in baking dish.
Heat oven 375. Melt butter, stir in flour & heat until bubbly. Add enough water to broth to equal 2 cups. Stir into flour mixture. Thicken...
Stir in chiles.
Add part to sour cream then back into broth...stir.
Pour over tortillas. Bake 20 minutes.
Sprinkle remaining cheddar cheese on top.

Easy to make...just looks like it takes alot of time. I use lowfat cheeses.
