1 stick of butter
1 c. (aprox,) packed brown sugar, dark or light
1 large plus 1 small can of Sweet Potatoes

Directions:
Directions:
Melt butter and sugar together. Add sweet potatoes from the can, reserving the liquid. Cook over very low heat for about an hour or until the potatoes begin to break up into little pieces. Add reserved juice if potatoes need more liquid as they simmer. If you cook too long they'll all turn into "scrumpies" rather than identifiable sweet potatoes, but then, that seems to be the idea.

Having watched Mom make these for many years I'm pretty sure this is how she did it. Add more butter and brown sugar for bigger batches.
