Grandma's Beet Pickles Recipe

4 quarts beets
Sliced onions-however many you want
3 c white vinegar
2 c water
2 1/2 c sugar
2 tsp allspice
1 stick cinnamon
1/2 tsp whole cloves
1 tsp salt

Directions:
Directions:
Cook beets until tender and slip skins under cold water
Bring everything but beets and onions to a boil and simmer 15 minutes.
Add beets and onions. Simmer for another 5 minutes.
Pick out the cinnamon stick when you ladle into jars. Keep cloves in
Spoon beets into jars, bring syrup back to boil
Spoon syrup over hot beets in jars
Add hot vinegar if more liquid is needed
Seal and process in a water bath for 5 minutes

This is Grandma's recipe. Papi loved her pickled beets so a few years after she died I ran into her recipe in one of her books. The best beets to pickle or eat fresh are Detroit Red.
