White wine, 1 glass per person
8 to 10 garlic cloves
1/2 lb cheese per person -- A mixture of Emmental & Gruyere
( or you can use 1/2 Swiss cheese & half cheddar cheese)
Nutmeg
Pepper
1 to 2 tsp cornstarch
1/2 C water

1 lg loaf of French bread - cut into large cubes - for dipping into the cheese

Directions:

Add wine to a large saucepan & bring to a boil.
Add the garlic buds and cook for a few minutes, then add the cheese.
Stir constantly on medium low heat.
When the cheese has melted, add nutmeg & pepper to taste.
Mix the corn starch well in the water and add to the cheese to thicken.
Poor into heated fondue pot.

The cheese will thicken as you eat it.
Use a good Calif. wine as opposed to a European wine, as some European wines don't allow the cheese to mix well.
The custom is that if you drop your bread in the cheese. You must buy the host or hostess a bottle of wine.
This was a tradition in the Bietenholz household and was served every Christmas Eve. Josh & Katie and Anna & Ty have continued the tradition.
