onions, optional

Mix together corn meal, onions, and water. Fry in oil until desired crispiness.

Cornbread is a must at the Liles Family. I can be done a variety of ways. Some use plain corn meal and fry like flat pancakes. Others use self-rising that will make the cornbread more of a cake. You can add onions or not. It all depends on how you like it.

Soon after I married Jerome Liles, Jr., he asked me to cook cornbread like his moma made. I whipped it up, put it in a cast iron skillet and in the oven - like my moma made it. When I served it to him, he was like what is this? It's cornbread, I said. No, that's not how you make it. After that, I cooked cornbread the "Liles'" way.
