Directions:
If you boiled your chicken, cook pasta in the seasoned chicken broth. Otherwise, just cook pasta according to package directions.
Sauté vegetables in olive oil until soft but not mushy.
Mix all ingredients together with the pasta and pour into a greased large (8 1/2" X 11 1/2") pyrex casserole dish. You may have enough tetrazzini to fill another small casserole dish.
Bake, covered, at 400 degrees for 45 minutes or until bubbly.
Uncover, top with the grated cheese and return to the oven until it has melted.

This was a staple in our home when we were growing up.
If you prefer to not use cream of ------soups, this is equally good with a homemade white sauce.
