5 C oats, gluten free & organic
2 C almonds, coarsley chopped
1 C pumpkin seeds
1/2 C sesame seeds
2 tsp cinnamon
1 tsp ginger
1 tsp kosher salt
1 1/2 C dried fruit
3/4 C maple syrup or local honey
2 T coconut oil

Directions:

Preheat oven to 350 degrees.
Mix together the oats, almonds, pumpkin seeds & sesame seeds.
Sprinkle the cinnamon, ginger & salt on top; stir.
Toss bite size pieces of the dried fruit on top.
Drizzle syrup or honey evenly over the oats mixture. Do the same with the oil.
Stir well until everything is coated.
Bake on 2 cookie sheets for 12 minutes, then stir. Keep repeating the process 3 more times.

You can add anything you like to this granola recipe. Peanut butter or PB powder is good. Any kind of nuts or seeds can be added, as well as dates, coconut etc.
