1 cup sugar
1/2 cup all purpose flour
1/2 tsp. salt
2 cups milk
4-5 ripe bananas, slice thin (cover with plastic wrap)
1 box vanilla wafers
1 tsp. vanilla extract
1 TBPS butter
4 egg yolks (large eggs)

Meringue:
5 egg whites (room temperature)
6 TBSP sugar
1/4 tsp. cream of tartar
1/2 tsp. vanilla extract

Directions:
Directions:
Line bottom of 9 x 9 pan with wafers. Combine sugar, flour, salt in a bowl and mix well. Set aside. In heavy saucepan, beat egg yolks well. Over medium heat, add the flour mixture. Boil until reaches pudding consistency (don't scorch). Remove from heat. Place bananas on top of wafers. Pour half of pudding mix over top of bananas. Repeat another layer of each.

Meringue:
Beat egg whites at high speed until foams and forms a soft peak. Add cream of tartar. At high speed, add sugar, one TBSP at a time until peaks. Fold the vanilla into meringue and spread over pudding. Bake until light brown at 375º for 12 to 15 minutes.
