1 pkg dry yeast
1/4 c warm water (115º to 120º)
1 c milk, scalded
1/2 c butter or margarine
1/3 c sugar
1/2 tsp salt
5-5 1/2 c flour, divided
2 eggs
2 Tbsp grated orange peel
1/4 c orange juice
Orange Filling
1/2 c sugar
1/2 c chopped walnuts, optional
1 Tbsp grated orange peel
1/4 c butter or margarine,softened

Dissolve yeast in water, set aside. Combine scalded milk, butter, sugar and salt; cool to lukewarm. Stir in 2 cup flour; beating until smooth. Add the eggs, one at a time, beating well after each addition. Stir in the yeast mixture, orange peel and orange juice. Add the remaining flour and stir to form a soft dough. Cover and let stand for 10 minutes.
On lightly floured surface, knead dough until smooth and elastic about 6 to 8 minutes; adding flour as needed if it becomes sticky. Place in greased bowl and cover. Let rise in warm place until doubled in size, about 1 hour.
Combine filling ingredients. Punch dough down; divide into thirds. Let rest for 10 minutes. Roll each section of dough out into a rectangle, 1/4 " thick. Spread each with 1/3 of filling and roll up starting from long edge. Cut into 1" slices. Place slices in greased muffin tins. Cover and let rise until doubled, about 45 to 60 minutes. Bake at 400º for 12 minutes.
