4 cube steaks, about 5 oz. each, or 4 pieces of round steak of the same size, pounded
1 cup flour
salt and pepper to taste
1 egg, lightly beaten
1 1/2 cups milk
1/2 cup canola oil or vegetable oil

Directions:
If using round steak, pound with wooden or metal meat tenderizer. Season the flour with salt and pepper. Dredge meat in flour mixture. Mix egg with 1/2 cup milk. Dip floured meat into milk mixture and then back into flour again. Pan fry meat in large frying pan with oil. Brown on both sides and remove from pan to drain on paper towels. Keep warm on serving platter in oven. Drain all remaining fat from pan except for 2 tbsp. Stir in 2 tbsp. flour mixture and scrape bottom of pan carefully so that you remove the brown pieces left over from frying. Using a whisk, stir in rest of milk and stir over medium heat until gravy thickens. If gravy becomes too thick, add additional milk. Check cream gravy for salt and pepper. Serve gravy over meat. Good with mashed potatoes.
