1 lb. bulk pork sausage
1 small bell pepper, chopped,optional
1 medium onion, chopped
1 1/2 c frozen shredded hash brown potatoes
1 c shredded Cheddar cheese, divided
1/2 c Original Bisquick mix
1 c milk
1/8 tsp pepper
2 eggs

Directions:
Directions:
Heat oven to 400º. Spray 9-inch glass pie plate with cooking spray. In a skillet, cook sausage, bell pepper and onion over medium heat 10 to 12 minutes, stirring occasionally,until sausage is no longer pink; drain. Mix sausage mixture, potatoes and 1/2 cup of the cheese. Spread in pan.
In medium bowl, stir Bisquick mix, milk, pepper and eggs until blended. Pour into pie plate. Bake 30 to 35 minutes or until knife inserted in center comes out clean. Sprinkle with remaining 1/2 cup cheese; bake 1 or 2 minutes longer or just until cheese is melted. Let stand 5 minutes before serving.
