2 large sweet potatoes
2 tbsp olive oil
2 tbsp honey(or more if you feel frisky)
2 tsp cinnamon(I normally just eyeball this)
dash of salt
dash of pepper

Directions:
Directions:
Preheat oven to 375º
Peel and cut sweet potatoes into 1in. cubes
In a large bowl combine sweet potatoes, oil, honey, cinnamon, salt and pepper
Toss to coat( here is where you may want to add extra honey, oil and cinnamon)
Dump potatoes onto a nonstick baking sheet
Roast for 30-45 minutes, stirring halfway.
These will burn if you do not stir them.
Keep an eye on them!

I decided to start making more colorful meals and I knew Mr. Meat and Potato(Blake) wouldn't like all those colors on his plate. We never tried sweet potatoes so I thought it would be a good start, because hello...... "potato" Success!!! We love these with grilled chicken or ribs paired with a salad or broccoli.
