Dough:

1 1/2 c. warm water
1/2 c. sugar
1 T. quick rise yeast
1/2 c. oil
2 eggs
1 1/2 tsp. salt
6 c. flour

Custard:

2 c. cream
2 c. sugar
1/3 c. flour
6 eggs

Fruit: Apples, pears, peaches or juneberries

OR

Streusel "Crumb" Topping:

4 c. sugar
2 1/2 c. flour
1 c. butter, softened
*Crumble together with hands until real fine

Directions:
Directions:
Mix water, sugar, and yeast. Let set 30 minutes. Add oil, eggs, salt and 2 c. flour. Let set 30 minutes. Add remaining flour to make soft dough. Cover bowl with a towel in a warm place. Let rise until double in size, about 1 hour. Knead down. Divide into 8 balls. Let set for 10 minutes. Butter pie tins. Press dough in pans until halfway up sides of tins. Beat cream, sugar, flour and eggs to make custard. Lay fruit on dough. Fill with custard until just below top side of dough. Sprinkle with cinnamon.

For Crumb kuchen, the filling for the streusel needs to be thicker than that of the fruit kuchen filling. Add 1 additional cup of flour to get a soft serve ice cream consistency. Spread over dough layer. Sprinkle crumb topping over filling.

Bake at 350 for 20 minutes. Start checking before time is up. Gently shake the pans in the oven. When the custard is firm, take out.
