Grandpa's Corn Pone Recipe

2 cups of a good quality cornmeal
1 1/2 tsp salt
1 T oil
Buttermilk

Cooking Utensil:
Black iron skillet or cookie sheet

Preheat oven to 400 degrees F.

Add salt & half the oil to the dry mixture.

Add buttermilk, enough so that the cornmeal is saturated but not runny. Stir well.

Add the remainder of the oil to the iron skillet or cookie sheet (if needed, add a little more oil)

At this point you can make "hoe cake" or "pone bread". If making hoe cake, pour the batter on the black iron skillet and smooth to cover. If making individual pones, form about half a cup of batter into a cylindrical shape and place on cookie sheet. Continue in this fashion until all of the batter has been used.

Bake for about 45 minutes, but check regularly near the end, as baking time depends on the thickness of the batter. The "pone" and/or "hoe cakes" should be crispy on top and slightly hard.

This is an old recipe that my grandfather "POP" mastered. Now "Grandpa Owen" is the master. I'm certain this recipe is more than 100 years old.
