Boil yuca until tender. Meanwhile, in a heavy pan, heat 1 cup vegetable oil until very hot, but not smoking. Pour in 1/2 cup sour orange or calamondin juice, 10 cloves of garlic which have been crushed, finely chopped and ground in a mortar with 1 tablespoon salt and pepper to taste and mixed with the juice to marinate for a little while. The oil will bubble up when garlic mixture is added. heat anew over low heat until simmering and serve hot over yuca. This mojito is recommended only for true garlic lovers. If recommended juice is not available, use 1/4 cup orange juice blended with 1/4 cup lime juice.
