Jerk Chicken
6-8 chicken legs or thighs
1xlime
Ginger
Rum
Small red chilli
All spice
Slt and peper
2 table spoons Jamaican jerk seasoning  (in a jar from asda or tesco)
 
RICE:
1 cup of  white rice (big coffee mug) 
2 tins of coconut milk 
Kidney beans
 
SALSA:
Mango
Ginger 
Mint 
Red onion
Small chilli
Pineapple

CHICKEN:
 
Prep: put chicken in a dish score the skin a couple of times, season with salt and pepper. Get a bowl chop finely  the chilli and ginger, add teaspoon old spice add the jerk seasoning  add the juice of a lime  and a dash or rum. Mix together place the squeezed lime in the dish and now rub the sauce into the chicken and you can leave in fridge ready to cook for later just cover with kitchen foil.
 
To cook 45 mins @200 degrees 
 
RICE:
 
Prep: add all together and cook like any rice just add beans for the last 5 mins.

SALSA:

Prep : chop finely add as much or as little as you want.
